Ingredients
1 lb smoked Polish sausage, sliced
4 medium russet potatoes, peeled and diced
1 large onion, sliced
3 tbsp olive oil or butter
Salt and pepper, to taste
1/2 tsp smoked paprika (optional, for extra flavor)
Fresh parsley, chopped (for garnish)
Instructions
Prepare the Potatoes: In a large skillet, heat 2 tbsp olive oil over medium heat. Add the diced potatoes, season with salt, pepper, and smoked paprika (if using). Cook, stirring occasionally, for about 10-12 minutes or until the potatoes are golden and tender.
Cook the Onions and Sausage: Push the potatoes to one side of the skillet, then add the remaining 1 tbsp olive oil. Add sliced onions and smoked sausage to the skillet, cooking until the onions are caramelized and the sausage is browned, about 5-7 minutes.
