This soup is so good, it will make you forget about regular lasagna.

List of components.

To make the soup base:

1 pound (450 grams) of ground beef or Italian sausage
1 little onion, chopped
3 pieces of garlic, finely chopped
1 can of crushed tomatoes (28 ounces)
1 can of diced tomatoes (14.5 ounces)
4 cups (1 liter) of chicken or beef broth
1 cup of water (if needed, to make it thinner)
2 teaspoons of Italian seasoning
1 teaspoon of dried basil
1 teaspoon of dried oregano
1/2 teaspoon of red pepper flakes (if you want it spicy).
Add salt and pepper according to your preference.

About the Noodles:

8 lasagna noodles, broken into small pieces.
For the Cheese Topping:

1 cup of ricotta cheese
1 cup of grated mozzarella cheese
1/2 cup of shredded Parmesan cheese
1 tablespoon of fresh parsley or basil, chopped (if desired, for decoration)

Directions

Make the soup broth.

Warm a big pot or Dutch oven on medium heat.
Add minced beef or Italian sausage and cook until it turns brown, breaking it into small pieces while cooking. Remove extra grease.
Add chopped onion and garlic to the mixture. Cook until they are soft and smell good (around 2-3 minutes).
Creating Taste:

Put the crushed tomatoes, diced tomatoes, broth, Italian seasoning, basil, oregano, red pepper flakes, salt, and pepper into the mixture.
Heat until boiling, then lower the temperature to a gentle simmer. Put a lid on the pot and cook the soup for 15-20 minutes so the flavors mix well.
Make the noodles.

Put the torn lasagna noodles into the soup that is gently boiling.
Cook the noodles until they are soft, stirring occasionally to avoid them sticking (around 8-10 minutes).
Make the cheese topping.

In a little bowl, combine ricotta cheese, shredded mozzarella, and grated Parmesan cheese.
Provide service:

Pour the hot soup into bowls.
Put a big spoonful of the cheese mixture on top of each bowl.
Add some fresh parsley or basil on top as decoration, if you like.
Advice:
To make the soup creamier, add 1/2 cup of heavy cream or a little milk before serving.
If you want it thinner, just add more broth or water.
This soup can be frozen successfully. Cook the noodles separately and add them when reheating to prevent them from becoming too soft.
