Ingredients:
1 cup orzo pasta
2 tablespoons olive oil
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
In the same pot, add minced garlic and sauté for 1 minute until fragrant.
Add the orzo and toast for 2 minutes, stirring frequently. Pour in the chicken broth and bring to a boil.
Reduce heat to low and simmer for 10 minutes until orzo is tender.
Stir in heavy cream and Parmesan cheese until creamy. Add the cooked chicken back in, season with salt and pepper, and mix well.
Serve warm, garnished with fresh parsley. Enjoy!
