1 medium beet, peeled and diced 🥬
2 carrots, peeled and sliced 🥕
1/2 cup dried cranberries 🍇
2 tablespoons olive oil 🫒

1/2 cup crumbled feta cheese 🧀
2 tablespoons honey 🍯

Instructions:

Preheat the Oven:
• Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Roast the Butternut Squash:
• Brush the butternut squash halves with olive oil, season with salt and pepper, and drizzle honey over the flesh.
