Sugar Cream Pie
Ingredients
- For the Pie Crust:
- 1 unbaked 9-inch pie crust (store-bought or homemade)
- For the Filling:
- 1 cup heavy cream
- 1 cup milk
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 3 large egg yolks
- 2 tbsp unsalted butter, softened
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg (for topping)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Pie Crust:
- Place the unbaked pie crust in a pie dish and set aside.
- Make the Filling:
- In a medium saucepan, combine the heavy cream, milk, sugar, cornstarch, and salt. Whisk together until smooth.
- Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble (about 5-7 minutes).
- In a separate bowl, lightly beat the egg yolks. Gradually add a small amount of the hot cream mixture to the egg yolks, whisking constantly to temper the eggs.
- Slowly pour the tempered egg yolk mixture back into the saucepan, continuing to stir. Cook for an additional 2-3 minutes until thickened.
- Add Flavor:
- Remove from heat and stir in the butter and vanilla extract until smooth.
- Fill the Crust:
- Pour the filling into the prepared pie crust, smoothing the top with a spatula.
- Bake:
- Bake in the preheated oven for about 25-30 minutes, or until the filling is set and slightly golden.
- Cool and Serve:
- Allow the pie to cool at room temperature, then refrigerate for at least 2 hours before serving.
- Before serving, sprinkle a little ground nutmeg on top for added flavor.
