Ingredients

  • For the Pie Crust:
    • 1 unbaked 9-inch pie crust (store-bought or homemade)
  • For the Filling:
    • 1 cup heavy cream
    • 1 cup milk
    • 1 cup granulated sugar
    • 1/4 cup cornstarch
    • 1/4 tsp salt
    • 3 large egg yolks
    • 2 tbsp unsalted butter, softened
    • 1 tsp vanilla extract
    • 1/4 tsp ground nutmeg (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Pie Crust:
    • Place the unbaked pie crust in a pie dish and set aside.
  3. Make the Filling:
    • In a medium saucepan, combine the heavy cream, milk, sugar, cornstarch, and salt. Whisk together until smooth.
    • Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble (about 5-7 minutes).
    • In a separate bowl, lightly beat the egg yolks. Gradually add a small amount of the hot cream mixture to the egg yolks, whisking constantly to temper the eggs.
    • Slowly pour the tempered egg yolk mixture back into the saucepan, continuing to stir. Cook for an additional 2-3 minutes until thickened.
  4. Add Flavor:
    • Remove from heat and stir in the butter and vanilla extract until smooth.
  5. Fill the Crust:
    • Pour the filling into the prepared pie crust, smoothing the top with a spatula.
  6. Bake:
    • Bake in the preheated oven for about 25-30 minutes, or until the filling is set and slightly golden.
  7. Cool and Serve:
    • Allow the pie to cool at room temperature, then refrigerate for at least 2 hours before serving.
    • Before serving, sprinkle a little ground nutmeg on top for added flavor.
