Ingredients
For the cabbage rolls:
1 large head of green cabbage
1 lb ground beef or pork (or a mix)
1/2 cup uncooked white rice
1 small onion, finely chopped
1/2 cup carrots, diced
2 cloves garlic, minced
1 egg, beaten
Salt and black pepper, to taste
For the sauce:
2 cups tomato sauce
1/2 cup beef or chicken broth
1 tbsp brown sugar
1 tbsp lemon juice
1/2 tsp dried thyme
Salt and black pepper, to taste
Directions
Prepare cabbage leaves: Bring a large pot of water to a boil. Carefully remove 12-14 large cabbage leaves and blanch them for 2-3 minutes until soft. Drain and let cool.
Mix the filling: In a large bowl, combine ground meat, rice, onion, carrots, garlic, egg, salt, and black pepper.
Assemble the rolls: Place 2-3 tablespoons of the filling onto the center of each cabbage leaf. Fold in the sides and roll up tightly.
Make the sauce: In a saucepan, combine tomato sauce, broth, brown sugar, lemon juice, thyme, salt, and black pepper. Simmer for 5 minutes.
Bake the rolls: Preheat oven to 350°F (175°C). Place the rolls seam-side down in a baking dish and pour the sauce over them. Cover with foil.
Bake for 1 hour, until the cabbage is tender and the filling is cooked through. Remove foil in the last 10 minutes for a slightly caramelized top.
Garnish with fresh parsley and serve warm.
