Ingredients:
For the Chicken:
1 lb boneless, skinless chicken thighs, diced into bite-sized pieces
1 tablespoon canola oil
2 tablespoons cornstarch
Salt and black pepper to taste
For the Bourbon Glaze:
1/4 cup bourbon whiskey
1/2 cup low-sodium soy sauce
1/4 cup dark brown sugar
1/4 cup ketchup
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes (optional for heat)
1/2 cup chicken stock
For the Broccoli:
2 cups fresh broccoli florets, steamed until tender
Directions:
Prepare the Chicken:
In a medium bowl, coat the chicken pieces with cornstarch, seasoning them with salt and pepper. Toss to ensure even coverage.
Cook the Chicken:
Heat the canola oil in a large skillet over medium-high heat. Add the chicken, cooking for 6-8 minutes until browned and cooked through. Set the chicken aside.
Make the Bourbon Glaze:
In the same skillet, combine bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ground ginger, crushed red pepper flakes, and chicken stock. Stir well and bring to a simmer.
Finish the Chicken:
Return the chicken to the skillet, stirring to coat it in the bourbon glaze. Let it simmer for 5-7 minutes, allowing the sauce to thicken and infuse the chicken with rich flavors.
Steam the Broccoli:
While the chicken simmers, steam the broccoli until tender.
Serve:
Plate the bourbon chicken over rice, with a side of steamed broccoli. Drizzle extra sauce over the chicken for added flavor.
