Shepherd’s Pie Soup with Toasted Bread Bites, Sour Cream, and Bacon

This Shepherd’s Pie Soup brings all the comforting flavors of the classic dish into a warm and cozy soup. With hearty vegetables, ground beef, creamy potatoes, and a touch of sour cream and bacon, it’s perfect for a cozy meal!

Ingredients:

For the Soup:

1 tablespoon olive oil

1 lb ground beef or ground lamb

1 onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon thyme

1 teaspoon rosemary

Salt and pepper, to taste

4 cups beef broth

1 cup frozen peas

1 cup frozen corn

1 lb potatoes, peeled and diced

1 cup half-and-half or milk

1 tablespoon cornstarch (optional, for thickening)

For Toppings:

4 slices cooked bacon, crumbled

1/2 cup sour cream

Fresh chives or parsley, chopped, for garnish

Instructions:

Step 1: Brown the Meat

In a large pot, heat the olive oil over medium heat. Add the ground beef (or lamb) and cook until browned, breaking it into small pieces. Drain any excess fat.

Step 2: Sauté Vegetables

Add the onion, garlic, carrots, and celery to the pot. Sauté for 5 minutes until the vegetables are softened.

Season with thyme, rosemary, salt, and pepper.

Step 3: Add Broth and Potatoes

Add the beef broth and potatoes to the pot. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.

Step 4: Add Peas, Corn, and Cream

Stir in the frozen peas and corn and cook for an additional 5 minutes.

Add the half-and-half (or milk). If you’d like a thicker consistency, whisk the cornstarch with a little cold water and stir into the soup.

Step 5: Serve with Toppings

Ladle the soup into bowls and top each serving with a spoonful of sour cream, a sprinkle of bacon crumbles, and fresh chives or parsley.
