Seafood Stuffed Peppers

Ingredients
4 large bell peppers (any color)
1/2 lb shrimp, peeled, deveined, and chopped
1/2 lb crab meat (fresh or canned)
1/2 cup cooked rice
1/2 cup shredded mozzarella or Monterey Jack cheese
1/4 cup green onions, chopped
1 clove garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
1 teaspoon Old Bay seasoning
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (for topping)
Instructions
Prepare the Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Lightly sprinkle the insides with salt. Place them in a baking dish with a bit of water (about 1/4 inch) in the bottom, to help them steam, and bake for 10 minutes to soften slightly.

Make the Filling: In a large mixing bowl, combine the chopped shrimp, crab meat, cooked rice, shredded cheese, green onions, garlic, parsley, lemon juice, Old Bay seasoning, salt, and pepper. Stir until everything is evenly mixed.

Stuff the Peppers: Remove the peppers from the oven and drain any excess water from the baking dish. Stuff each pepper generously with the seafood mixture.

Top and Bake: Sprinkle grated Parmesan cheese over the tops of the stuffed peppers. Return the dish to the oven and bake for 20-25 minutes, or until the peppers are tender and the filling is heated through.

Serve: Let the stuffed peppers cool for a few minutes before serving. Garnish with additional parsley and a squeeze of lemon if desired.
