Roasted Cauliflower and Lentil Bowl with Green Goddess Dressing 

A flavorful and healthy vegetarian dish.

Ingredients:

For the roasted cauliflower:
1 head of cauliflower, cut into florets
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

For the lentils:
1 cup dried brown lentils
3 cups vegetable broth
1/4 teaspoon salt

For the green goddess dressing:
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped parsley
1/4 cup chopped chives
1 clove garlic, minced
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions:

• Preheat oven: Preheat your oven to 400°F (200°C).

• Roast cauliflower: Toss the cauliflower florets with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes, or until tender and slightly browned.

• Cook lentils: Bring the vegetable broth to a boil in a large pot. Add the lentils and salt. Reduce heat, cover, and simmer for 20-25 minutes, or until the lentils are tender.

• Make green goddess dressing: In a small bowl, whisk together the mayonnaise, sour cream, parsley, chives, garlic, lemon juice, salt, and pepper.

• Assemble bowls: Divide the roasted cauliflower and cooked lentils into bowls. Drizzle with the green goddess dressing.

• Serve: Serve immediately and enjoy!

Tips:
• For a spicier dish, add a pinch of red pepper flakes to the seasoning mixture.
• You can add other vegetables to the bowls, such as roasted carrots or Brussels sprouts.
• Serve with a side salad or grilled bread.
