Pecan Pie Bites

Mini versions of your favorite pecan pie, these bite-sized treats are perfect for parties or whenever you want a little taste of the South!

You will need:

1 refrigerated pie crust (or homemade)

1 cup chopped pecans

1/2 cup brown sugar

1/3 cup corn syrup

1 egg, beaten

1 tbsp melted butter

1 tsp vanilla extract

Pinch of salt

Directions:

Preheat the oven to 350°F (175°C). Grease a mini muffin pan.

Roll out the pie crust and cut into small circles using a cookie cutter. Press each circle into the mini muffin pan to form small crusts.

In a bowl, mix together the chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt.

Spoon the pecan mixture evenly into each crust.

Bake for 20-25 minutes until golden and set.

Cool in the pan before removing and serving.

Cook Time: 25 minutes

Servings: 12 bites
