Directions:
Prepare the Cheesecake Filling:
In a bowl, beat cream cheese until smooth.
Add powdered sugar, whipped topping, and vanilla extract. Mix until creamy.
Spoon the cheesecake filling into a piping bag and refrigerate.
Make the Peach Topping:
In a pan over medium heat, combine diced peaches, brown sugar, cinnamon, and lemon juice.
Cook for 5-7 minutes until peaches are tender and the mixture thickens. Remove from heat and let cool.
Prepare the Crumble Topping:
In a bowl, mix flour, brown sugar, melted butter, and cinnamon until crumbly.
Spread the mixture on a baking sheet and bake at 350°F (175°C) for 10-12 minutes, or until golden. Let it cool.
Assemble the Cones:
Pipe cheesecake filling into each waffle cone.
Top with a spoonful of peach topping.
Sprinkle the crumble topping over the peaches for extra crunch.
