4 large russet potatoes
1 lb steak, cut into bite-sized pieces
Salt and pepper to taste
2 tablespoons olive oil
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup green onions, chopped
1/4 cup cooked bacon bits (optional)
Directions:
Bake the Potatoes: Preheat the oven to 400°F (200°C). Pierce potatoes with a fork, rub with olive oil, and season with salt. Bake for about 45-60 minutes until tender.
Cook the Steak: In a skillet, heat olive oil over medium-high heat. Season steak pieces with salt and pepper. Cook for 5-7 minutes until browned and cooked to your liking.
Assemble: Once potatoes are done, slice them open and fluff the insides. Top with steak bites, cheddar cheese, sour cream, green onions, and bacon bits if desired.
