Ingredients
1 lemon, juiced and zested
¼ cup olive oil
3 garlic cloves, finely minced (or 1 teaspoon garlic powder)
1 teaspoon dried oregano
½ teaspoon smoked paprika
½ teaspoon + a pinch of salt
¼ teaspoon coarse black pepper
1 pound thin-sliced chicken breast
Garnish:
¼ cup crumbled feta cheese
¼ cup fresh chopped parsley
Lemon wedges, for serving
Instructions
Marinate the Chicken:
In a large bowl, mix together lemon juice, zest, olive oil, minced garlic, oregano, paprika, salt, and pepper until well combined. Reserve ¼ cup of this mixture for later use. Add chicken breasts to the remaining marinade, coating each piece evenly. Cover with plastic wrap and refrigerate for 30 minutes.
Cook the Chicken:
Heat a nonstick skillet over medium-high heat and drizzle with olive oil. Place the marinated chicken in the pan, searing until golden brown on the bottom (around 3-4 minutes). Flip and continue cooking for another 3-4 minutes, or until the chicken is cooked through and the juices run clear.
Finish and Serve:
Transfer the chicken to a serving plate. Drizzle the reserved marinade over the top, then garnish with fresh chopped parsley and crumbled feta. Serve with lemon wedges on the side.
