Double Crust Cheesecake

Ingredients:

– 1 cup salted butter, melted

– 1/2 cup light brown sugar

– 1 box graham crackers (about 27, crushed into fine crumbs)

Instructions:

1. Preheat your oven to 350°F (175°C).

2. In a mixing bowl, combine the crushed graham crackers and light brown sugar. Mix well.

3. Pour in the melted butter and stir until the mixture resembles wet sand.

4. Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan to create the crust. Bake for 10 minutes, then remove it from the oven to cool.

5. In another bowl, prepare the cheesecake filling by combining 16 ounces of cream cheese, 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract. Beat until smooth and creamy.

6. Pour the cheesecake filling into the cooled crust and spread it evenly.

7. Bake the cheesecake in the preheated oven for 45 minutes, or until the center is set and only slightly jiggly.

8. Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour. This helps prevent cracking.

9. Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.

10. When ready to serve, carefully run a knife around the edges and release the sides of the springform pan. Slice, serve, and enjoy!
