Ingredients:
• 2 eggs
• 2/3 cup milk
• 32 Ritz crackers, crushed
• 1/2 cup chopped onion
• 4 oz shredded sharp cheddar cheese
• 1 tsp salt
• 1/4 tsp pepper
• 1 1/2 lbs ground beef
• 1/2 cup ketchup
• 1/2 cup brown sugar
• 1 tsp mustard
Instructions:
Preheat oven to 350°F.
Beat eggs, then add milk and crushed crackers. Stir in onion and cheese.
Mix in ground beef until well combined, then shape into a loaf.
Bake for 45 minutes.
For the topping, mix ketchup, brown sugar, and mustard.
After 30 minutes of baking, spoon half the topping over the meatloaf. Bake for another 10 minutes.
Add the rest of the topping and bake for an additional 5-10 minutes.
