Cinnamon Churro Cheesecake Bars

These cinnamon churro cheesecake bars combine a buttery graham cracker crust with creamy cheesecake filling and a crunchy cinnamon-sugar topping for a delicious twist on the classic churro.

Ingredients:

Crust:

1 cup graham cracker crumbs

4 tbsp melted butter

1/4 cup sugar

1 tsp cinnamon

Cheesecake Filling:

16 oz cream cheese, softened

1 cup sugar

1 tsp vanilla extract

2 large eggs

Cinnamon Sugar Topping:

1/4 cup sugar

2 tsp cinnamon

Directions:

Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, melted butter, sugar, and cinnamon until well combined. Press the mixture firmly into the bottom of a baking dish to form an even layer.

Make the Cheesecake Filling: In a separate bowl, beat the softened cream cheese and sugar until smooth. Add the vanilla extract and eggs, beating until the mixture is creamy and well combined.

Pour the cheesecake filling over the crust, spreading it out evenly.

Add Cinnamon Sugar Topping: In a small bowl, mix the sugar and cinnamon. Sprinkle this mixture generously over the top of the cheesecake filling.

Bake: Bake for 25-30 minutes or until the cheesecake layer is set. Remove from the oven and allow the bars to cool, then refrigerate for at least 2 hours to set fully.

Serve: Slice into bars and enjoy the delicious combination of creamy cheesecake with a crunchy cinnamon-sugar topping!
