Chicken Veggie Bowl

Ingredients:

500g chicken breast (sliced)

1/4 cup soy sauce

2 tbsp olive oil

1 tbsp honey

1 garlic clove, minced

1 tsp sesame seeds (for garnish)

2 cups broccoli florets

1 cup cherry tomatoes, halved

1 cucumber, sliced

2 ears of corn, cut into sections

1 cup shredded purple cabbage

2 cups mixed lettuce

Cooked rice or quinoa (as a base, optional)

Instructions:

Marinate the Chicken:

In a bowl, mix soy sauce, olive oil, honey, and minced garlic. Add sliced chicken, toss to coat, and let marinate for 30 minutes.

Cook the Chicken:

Heat a pan over medium heat. Cook the chicken slices until fully cooked, about 6-8 minutes. Sprinkle with sesame seeds for garnish.

Prepare the Vegetables:

Steam the broccoli for 3-5 minutes until tender.

Slice the cucumbers, halve the cherry tomatoes, and prepare the lettuce and purple cabbage.

Assemble the Bowls:

In each bowl, start with a base of rice or quinoa if using.

Arrange the cooked chicken, steamed broccoli, cucumber slices, cherry tomatoes, purple cabbage, corn, and mixed lettuce.

Serve:

Drizzle with extra olive oil or dressing of choice, and enjoy your vibrant and healthy bowl!
