Ingredients:

  • For the meatloaf:
    • 1 lb (450g) ground beef
    • 1/2 lb (225g) ground pork (optional for extra flavor)
    • 1 small onion, finely chopped
    • 2 garlic cloves, minced
    • 1/2 cup breadcrumbs
    • 1/4 cup milk
    • 1 egg
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon ketchup (plus extra for topping)
    • 1 teaspoon mustard
    • Salt and pepper to taste
    • 1 cup shredded cheddar cheese (for topping)
    • Fresh thyme (optional, for garnish)
  • For the mashed potatoes:
    • 4-5 medium potatoes, peeled and chopped
    • 1/2 cup milk
    • 2 tablespoons butter
    • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish and line it with foil for easy cleanup.
  2. Prepare the Mashed Potatoes:
    • Boil the potatoes in salted water until tender, about 15-20 minutes.
    • Drain the water, and mash the potatoes with butter and milk until smooth. Season with salt and pepper to taste. Set aside.
  3. Make the Meatloaf:
    • In a large bowl, combine ground beef, ground pork, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, ketchup, mustard, salt, and pepper.
    • Mix everything using your hands or a spoon until well combined. Be careful not to overmix.
  4. Shape the Meatloaf:
    • Shape the mixture into individual meatloaves or a large loaf and place it on top of the mashed potatoes in the baking dish.
    • Spread a layer of ketchup over the top of the meatloaf for extra flavor.
