To make this salad, I started by cutting one Granny Smith apple and one red delicious apple into matchsticks.
I placed the sliced apple pieces into a large mixing bowl.
I poured some lemon juice over the apples.
I tossed the apples until they were all coated in the lemon juice and then set the bowl aside to let the apple pieces soak in the lemon juice for 5 minutes.
The lemon juice will stop the apples from browning.
I poured some store bought matchstick cut carrots into a large bowl.
I added some finely diced onion to the bowl.
I also added some dried sweetened cranberries to the bowl.
I added the apples to the bowl.
Then I added some vanilla yogurt and mayo to the bowl.
I also added some sugar, salt and pepper to the bowl.
I stirred until all of the ingredients were well combined.
Then I added some mandarin segments to the bowl.
I stirred the mandarins into the salad.
Then I covered the bowl and placed it in the refrigerator to chill for three hours.
After three hours I removed the bowl from the fridge and gave the salad one last stir.
I transferred the salad to a serving bowl.
This carrot apple salad is a great side dish for a variety of meals.
It could be served with seafood, a nice pork tenderloin or even just with hamburgers and hot dogs.
