Blackened Salmon Stuffed with Spinach and Parmesan CheeseIngredients:

2 salmon fillets
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
1 tablespoon blackened seasoning
1 tablespoon olive oil
1 clove garlic, minced
Salt and pepper to taste
Lemon wedges for serving
Directions:

Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add garlic and spinach, cooking until wilted. Remove from heat and stir in Parmesan cheese.
Cut a pocket in each salmon fillet and stuff with the spinach mixture. Season the outside with blackened seasoning, salt, and pepper.
Place the fillets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through.
Serve with lemon wedges for a fresh finish.
