beef soup with carrots and radish recipe

A delicious clear soup of beef with radish and carrot with a hint of cilantro. The broth is full of sweetness from the radish and carrot that is slowly simmered to brings out the freshness and flavours.

Ingredients:

1 lb beef sirloin, thinly sliced

2 carrots, peeled and sliced

1 daikon radish, peeled and sliced

1 onion, chopped

2 cloves garlic, minced

6 cups beef broth

1 tsp salt

1/2 tsp black pepper

1/4 cup chopped cilantro

Instructions:

In a large pot, sauté onion and garlic over medium heat until fragrant.

Add beef broth and bring to a boil.

Add carrots and daikon radish. Reduce heat and simmer for 15 minutes, or until vegetables are tender.

Add sliced beef and cook until just done, about 2-3 minutes.

Season with salt and pepper.

Garnish with cilantro and serve hot.
