Lemon Sugar Cookies

Ingredients:

2 eggs

60g (½ cup) sugar

50 ml (3 tbsp.) lemon juice

30 ml (2 tbsp.) vegetable oil

½ lemon (zest)

1 teaspoon (5g) baking powder

210g (1 ⅔ cup) all-purpose flour

50g (¼ cup) cornstarch

120 ml (½ cup) milk

Sugar for sprinkling

Preparation:

Whisk the eggs with sugar, lemon zest, vegetable oil, and lemon juice.

In a separate bowl, mix the flour, cornstarch, and baking powder.

Add the dry ingredients to the egg mixture and stir until combined.

Refrigerate the dough for 30 minutes.

Cut the cooled dough into pieces, roll into balls, and place on a baking sheet.

Bake for 15 minutes at 180°C/350°F.

Once cooled, dip the cookies in milk and sprinkle them with sugar.
