Honey Glazed Salmon with Brown Rice Bowl 

This Honey Glazed Salmon with Brown Rice Bowl is a beautifully balanced meal with tender, caramelized salmon bites on a bed of hearty brown rice, paired with fresh toppings for a satisfying, nutritious dish. It’s quick to prepare and packed with flavor—ideal for a wholesome weeknight dinner! 

Ingredients:
Honey Glazed Salmon:
1 lb salmon fillet, cut into bite-sized cubes 

2 tbsp honey 

1 tbsp soy sauce 

1 tbsp olive oil 

1/2 tsp garlic powder 

Salt & pepper to taste 

1 tbsp sesame seeds for garnish (optional) 

Brown Rice:
1 cup brown rice 

2 cups water or vegetable broth 

Salt to taste 

Toppings:
1/2 avocado, sliced 

1/2 cup cucumber, sliced 

1/2 cup shredded carrots 

Fresh cilantro or green onions, chopped 

Lime wedges for serving 

Instructions:
Cook the Brown Rice: Rinse the rice under cold water. Combine rice with water or vegetable broth and a pinch of salt in a pot. Bring to a boil, reduce heat, cover, and let simmer for 30-35 minutes, or until the rice is tender. Fluff with a fork and set aside.

Marinate the Salmon: In a small bowl, mix together honey, soy sauce, olive oil, garlic powder, salt, and pepper. Add the salmon cubes, tossing to coat them evenly, and let marinate for 10-15 minutes.

Cook the Salmon: Heat a skillet over medium heat. Add the marinated salmon and cook for 2-3 minutes on each side, or until golden and caramelized. For extra flavor and crunch, sprinkle with sesame seeds just before removing from the heat.

Assemble the Bowl: Start with a scoop of brown rice, layer on the honey-glazed salmon, and add avocado slices, cucumber, and shredded carrots for a burst of fresh flavor and color.
