Spicy Thai Noodle Soup

A delicious soup with Thai flavors, including chicken, rice noodles, and a tasty coconut curry broth. Great for a comfortable meal at home!

List of components.

1 tablespoon of olive oil
1 and a half pounds of chicken breasts without bones or skin, cut into pieces.
Add salt and pepper according to your preference.
3 pieces of garlic, finely chopped
1 red pepper, chopped
1 onion, chopped
3 tablespoons of red curry paste
1 tbsp freshly grated ginger
6 cups of chicken broth with low sodium.
1 can of coconut milk (13.5 ounces)
4 ounces of rice noodles
1 tablespoon of fish sauce
2 teaspoons of brown sugar
3 green onions, cut into small pieces.
1/2 cup of chopped cilantro
1/4 cup of chopped basil
2 tablespoons of lime juice

Instructions

Prepare the chicken.

Warm the olive oil in a big pot on medium heat.
Add salt and pepper to the chicken pieces. Cook until they are golden on all sides. Take out and keep to the side.
Cook Vegetables in a Pan

In the same pot, add the garlic, red bell pepper, and onion. Cook for 4-5 minutes until the ingredients are soft and smell good.
Create the foundation of flavors

Add the red curry paste and freshly grated ginger to the mixture. Cook for 1-2 minutes to bring out their flavors.
Add the chicken broth and coconut milk, stirring well to combine. Heat the mixture until it boils.
Cook over low heat.

Return the cooked chicken to the pot, reduce the heat, and let it simmer for 10 minutes to meld the flavors.

Make the noodles

Add the rice noodles, fish sauce, and brown sugar. Cook for 3-4 minutes until the noodles are soft.
Use fresh herbs to finish your dish.

Take the pot off the stove. Add the chopped green onions, cilantro, basil, and lime juice for a fresh flavor.
