Ingredients:
For the Cobbler:
1 cup chopped pecans
1 cup brown sugar
1 cup corn syrup
1/4 cup melted butter
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/4 teaspoon salt
2 large eggs, beaten
1 cup milk
1 1/2 cups biscuit mix (or a homemade biscuit mix)
For Serving:
Vanilla ice cream (optional)
Directions:
Preheat the Oven:
Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized oven-safe dish.
Prepare the Pecan Mixture:
In a large mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, flour, salt, and beaten eggs. Stir until well combined.
Pour the Mixture into the Baking Dish:
Pour the pecan mixture into the prepared baking dish, spreading it evenly.
Prepare the Biscuit Topping:
In a separate bowl, whisk together the milk and biscuit mix until smooth. Pour the biscuit mixture over the pecan mixture, covering it as evenly as possible.
Bake the Cobbler:
Bake for 45-50 minutes or until the top is golden brown and the center is set. The cobbler should rise slightly, and the edges will become golden and crispy.
Serve:
Let the cobbler cool for a few minutes before serving. Optionally, serve with a scoop of vanilla ice cream for an extra indulgent treat.
