Ingredients:
2 salmon fillets
1 cup fresh pineapple, diced
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic, minced
1/2 teaspoon ginger, grated
Salt and pepper to taste
Fresh cilantro or parsley for garnish
Directions:
Prepare Marinade: In a bowl, mix honey, soy sauce, olive oil, minced garlic, and grated ginger. Stir well until combined.
Marinate Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let it marinate in the refrigerator for at least 30 minutes.
Preheat Grill: Preheat your grill or a grill pan over medium heat.
Grill Pineapple: While the salmon is marinating, toss the diced pineapple with a bit of olive oil and grill for about 2-3 minutes on each side until caramelized. Remove and set aside.
Grill Salmon: Take the salmon out of the marinade and season with salt and pepper. Grill for about 5-6 minutes on each side, or until the salmon flakes easily with a fork.
Serve: Plate the salmon and top with grilled pineapple. Drizzle with the remaining marinade and garnish with fresh cilantro or parsley. Enjoy!
