Chicken Broccoli Stuffed Baked Potato

Ingredients:

4 large russet potatoes

2 chicken breasts, cooked and shredded

2 cups broccoli florets, steamed

1/2 cup sour cream

1/2 cup shredded cheddar cheese

1/4 cup milk

2 tbsp butter

Salt and pepper to taste

Fresh chives for garnish

Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C). Pierce each potato with a fork several times to allow steam to escape during baking.

Bake the Potatoes: Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

Prepare the Filling: While the potatoes are baking, mix the shredded chicken, steamed broccoli, sour cream, butter, milk, salt, and pepper in a large bowl until well combined.

Prepare the Potatoes for Stuffing: Once the potatoes are baked, remove them from the oven and allow them to cool slightly. Cut a slit lengthwise in the top of each potato and gently scoop out some of the inside to create space for the filling.

Stuff the Potatoes: Fill each potato generously with the chicken and broccoli mixture. Top each stuffed potato with shredded cheddar cheese.

Melt the Cheese: Return the stuffed potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
