This No-Bake Orange Creamsicle Cheesecake captures the nostalgic flavors of creamy vanilla and bright orange—just like a classic creamsicle!
Ingredients:
12 oz vanilla wafers
1/2 cup granulated sugar
4 tbsp unsalted butter, melted
Cheesecake Filling:
2 packages cream cheese (8 oz each), softened
1 cup granulated sugar
2 cups heavy cream
1 box orange Jello (3 oz)
1 cup boiling water
1/2 cup powdered sugar
1/2 tsp vanilla extract
Zest of one orange
Instructions:
Prepare the Crust: In a food processor, pulse vanilla wafers until they resemble crumbs. Add 1/2 cup granulated sugar and melted butter, pulsing until combined.
Press into Pan: Spray a 9-inch springform pan with cooking spray, then press the crust mixture into the bottom and slightly up the sides. Chill in the freezer for 30 minutes.
Cream Cheese Mixture: In a large bowl, beat cream cheese and 1 cup granulated sugar with a hand mixer until smooth and creamy. Set aside.
Orange Layer: In another bowl, dissolve the orange Jello in boiling water. Set aside to cool slightly.
Whipped Cream: In a medium bowl, whip heavy cream with powdered sugar, vanilla extract, and orange zest until stiff peaks form.
Combine Layers: Mix half of the whipped cream with the orange Jello mixture, and fold the remaining whipped cream into the cream cheese mixture.
